Can a future employee end the "at-will" contract even before joining the firm in the state of Texas? - employee contract letter

I have this job in Texas, the "at will" contract. Now I am waiting for better offers to come next week. However, the contractor wants to take a decision on the offer within a week. Is it possible that were not following the signing of the Letter of Offer them this company, just because I have to get a better deal elsewhere?
